- 2 piece Chicken breast — butterflied
- 50 g Plain flour
- 2 piece Eggs — beaten
- 100 g Panko breadcrumbs
- 30 g Parmesan — grated
- 4 tbsp Olive oil
- 80 g Rocket
- 150 g Cherry tomatoes — halved
- 1 piece Lemon
- 1 tsp Fine sea salt
- 0.5 tsp Black pepper
Method
Place chicken between cling film. Bash with rolling pin until 1cm thick.
Season chicken with salt and pepper.
Set up 3 bowls: flour, beaten eggs, panko mixed with half the parmesan.
Coat chicken in flour, then egg, then breadcrumbs. Press firmly.
Heat 3 tbsp oil in large frying pan over medium-high heat.
Fry chicken 4-5 minutes each side until golden and cooked through.
Drain on kitchen paper.
Toss rocket and tomatoes with remaining olive oil and lemon juice.
Place chicken on plates. Top with salad.
Garnish with remaining parmesan and lemon wedges.
