  • 1 kg Chicken wings — split into drumettes and flats
  • 100 g Cornflour
  • 1 tsp Baking powder
  • 1 tsp Fine sea salt
  • 1 litre Vegetable oil — for deep frying

  • 180 ml Hot sauce — Frank's RedHot preferred
  • 100 g Unsalted butter
  • 1 tbsp White wine vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Garlic powder

Pat wings completely dry with kitchen paper. Moisture is the enemy of crispy wings.

Mix cornflour, baking powder, and salt in a bowl. Toss wings until evenly coated.

Heat oil to 180°C (350°F). Fry wings in batches for 10-12 minutes until golden. Don't overcrowd.

Remove wings, drain on kitchen paper, and rest for 5 minutes. Increase oil to 190°C (375°F).

Double fry wings for 3-4 minutes until deep golden and extra crispy. Drain well.
