  • 1 kg Chicken wings — split into drumettes and flats
  • 100 g Cornflour
  • 1 tsp Baking powder
  • 1 tsp Fine sea salt
  • 1 litre Vegetable oil — for deep frying

Pat the wings completely dry with kitchen paper - this is crucial for crispy skin. Place in a large bowl.

Mix cornflour, baking powder, and salt. Toss wings in the mixture until evenly coated. Shake off excess.

Heat oil to 180°C (350°F) in a deep pan or fryer. Fry wings in batches for 10-12 minutes until golden and cooked through.

Remove wings and drain on kitchen paper. Let rest for 5 minutes, then increase oil temperature to 190°C (375°F).

Double fry the wings for 3-4 minutes until extra crispy and deep golden brown. Drain well.
