For the Chicken

  • 150 g Chicken breast fillets
  • 1 tbsp Olive oil
  • 1 clove Garlic — minced
  • 0.5 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

For Assembly

  • 1 piece Tortilla Wrap
  • 60 g Mozzarella — torn or sliced
  • 40 g Sun-Dried Tomatoes — drained and chopped
  • 10 g Fresh basil — fresh leaves
  • 20 g Rocket
  • 2 tbsp Italian Dressing

Method

  1. Slice the chicken breast horizontally to create a thinner piece (or butterfly it). In a bowl, combine olive oil, minced garlic, dried basil, salt, and pepper. Add the chicken and coat thoroughly. Marinate for at least 10 minutes, or up to 2 hours in the refrigerator.

  2. Heat a griddle pan or non-stick frying pan over medium-high heat. Cook the chicken for 5-6 minutes on each side until cooked through (internal temperature of 75°C/165°F) and nicely charred. Remove and rest for 3 minutes, then slice into strips.

  3. While the chicken rests, warm your tortilla wrap in a dry pan or microwave for 10-15 seconds until pliable.

  4. Lay the warm tortilla flat. Drizzle 1 tablespoon of Italian dressing down the center. Layer with rocket, then add the sliced chicken strips.

  5. Top with torn mozzarella, sun-dried tomatoes, and fresh basil leaves. Drizzle with the remaining Italian dressing.

  6. Fold in the sides of the wrap, then roll tightly from bottom to top. If desired, return to the pan seam-side down for 1-2 minutes to seal and create grill marks. Cut in half diagonally and serve immediately.
