Pasta
- 400 g Macaroni pasta
- 1 tsp Fine sea salt — for pasta water
Cheese Sauce
- 50 g Unsalted butter
- 50 g Plain flour
- 500 ml Whole milk
- 150 ml Double cream
- 200 g Cheddar cheese — grated
- 100 g Red Leicester cheese — grated
- 60 ml Peri-peri sauce — medium or hot, to taste
- 1 tsp Smoked paprika
- 0.5 tsp Garlic powder

- 50 g Panko breadcrumbs
- 50 g Cheddar cheese — grated
- 20 g Unsalted butter — melted
Method
Preheat the oven to 200°C (180°C fan) and lightly grease a large baking dish.
Cook macaroni in salted boiling water for 2 minutes less than package instructions (it will continue cooking in the oven). Drain and set aside.
In a large saucepan, melt the butter over medium heat. Add flour and whisk continuously for 2 minutes to form a smooth roux.
Gradually add milk, whisking constantly to prevent lumps. Keep whisking until the sauce thickens, about 5-7 minutes.
Stir in the double cream, then remove from heat.
Add the grated cheddar and Red Leicester, stirring until completely melted and smooth.
Stir in the PERi-PERi sauce, smoked paprika, and garlic powder. Taste and adjust seasoning and heat level.
Add the cooked macaroni to the sauce and stir until every piece is coated. Transfer to the prepared baking dish.
Mix panko breadcrumbs with melted butter and grated cheese. Sprinkle evenly over the mac and cheese.
