Pizza Base
- 500 g Plain Flour
- 14 g Dried Yeast — 2 tsp
- 2 tbsp Olive oil
- 1 tsp Sugar
- 1 tsp Salt
Pizza Sauce & Toppings
- 400 g Chopped Tomatoes (tinned) — 1 tin
- 2 tbsp Tomato Puree
- 1 piece Onion — finely diced
- 2 cloves Garlic — minced
- 1 tbsp Oregano
- 2 tsp Sugar
- 1 tsp Black Pepper
- 200 g Mozzarella Cheese — grated
Method
Make the pizza base: Mix warm water (300ml) with yeast and sugar, let stand for 5 minutes until frothy. In a large bowl, combine flour and salt. Add yeast mixture and olive oil, knead for 8-10 minutes until smooth. Cover and let rise for 1 hour until doubled.
Make the sauce: Heat 3 tbsp olive oil in a pan, fry onion and garlic until softened, about 5 minutes. Add chopped tomatoes, tomato puree, oregano, sugar, salt and pepper. Simmer for 15 minutes until thickened.
Preheat oven to 220°C (200°C fan). Divide dough into 2 portions. Roll each into a rectangle about 1cm thick on a floured surface.
Place dough on lined baking trays. Spread tomato sauce evenly over each base, leaving a small border. Top generously with grated mozzarella.
Bake for 12-15 minutes until cheese is melted and bubbling, and crust is golden. Slice and serve hot.

- Let the dough rise properly for a light, fluffy base - the full hour makes a big difference to the texture.
- Use fresh mozzarella for the best melting quality and flavour. Pre-grated works too, but fresh gives that authentic pizza experience.
- Preheat your oven fully before baking - a hot oven is key to getting that crispy bottom and perfectly melted cheese.
