Inspired by American BBQ culture but with British sensibilities, this burger showcases Bill's philosophy of taking classic dishes and adding their own twist. The bourbon BBQ sauce was developed in-house to create something unique – not too sweet, with just enough smoky depth and a hint of warmth from the bourbon. Paired with quality British beef and proper bacon, it's a burger that satisfies even the heartiest appetites while maintaining the quality Bill's is known for.

For the Burgers

  • 800 g Beef Mince — 20% fat
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 8 slice Bacon — streaky
  • 4 slice Cheddar Cheese — mature

For the Bourbon BBQ Sauce

  • 150 ml BBQ Sauce
  • 2 tbsp Bourbon Whiskey
  • 1 tbsp Brown Sugar
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp Smoked Paprika

To Assemble

  • 4 piece Brioche Burger Buns
  • 4 piece Lettuce — leaves
  • 2 piece Tomato — sliced
  • 1 piece Red Onion — sliced into rings
  • 8 piece Pickles — optional

Make the bourbon BBQ sauce by combining all sauce ingredients in a small saucepan. Simmer over low heat for 5-7 minutes until slightly thickened. Set aside to cool.

In a large bowl, gently mix the beef mince with salt, pepper, and garlic powder. Don't overwork the meat or the burgers will be tough. Divide into 4 equal portions (about 200g each) and shape into patties slightly larger than your buns as they'll shrink during cooking. Make a small indent in the centre of each patty with your thumb to prevent doming.

Fry or grill the bacon until crispy, then drain on kitchen paper and keep warm. Wipe out the pan if using for the burgers.

Heat a large griddle pan or heavy frying pan over high heat. Once smoking hot, cook the burger patties for 3-4 minutes on the first side without moving them. Flip and cook for another 3-4 minutes for medium (adjust timing for your preference). In the last minute of cooking, place a slice of cheddar on each patty and cover the pan briefly to melt the cheese.

While the burgers cook, toast the cut sides of the brioche buns in a dry pan or under the grill until lightly golden.

To assemble, spread bourbon BBQ sauce on the bottom bun. Add lettuce, then the cheesy burger patty. Top with 2 slices of crispy bacon, tomato slices, red onion rings, and pickles if using. Drizzle with more BBQ sauce, then crown with the top bun.

Serve immediately with chips or fries, extra BBQ sauce on the side, and plenty of napkins!
